Dedication has Paid Off!

As you may know the original intent of this blog was to teach me healthy eating habits so that we could lower Kevin's cholesterol and to model a healthy lifestyle for our children. We'll my dedication to the blog and to my family has paid off!!!!!

Kevin got his cholesterol numbers back today. Here are the original numbers and current numbers; originally he was 255, now 212. His LDLs dropped from 192 to 162. He is only now 12 points away from being within "normal" range. This is such great news. What is really exciting about this is that the hard work is finally measurable. It's not like weight loss where you can see the pounds drop off weekly or monthly. His cholesterol is only checked every six months. We new that the results would be one of three things: the same, lower or higher. They were lower :)

Our diet was a big part of this change. However, he has also been working out and really watching portion control and he has paid a lot of attention to what he was having for breakfast and lunch too. I helped by cooking healthy dinners and buying healthier groceries but he still chose what to eat for two of our three main meals each day.

One thing that we've really noticed is that once we started to eat healthier it became habit, and now we don't miss our "old ways". An example of our "old ways" was eating a lot of eggs. Now, we purchase egg substitutes or just use egg whites and throwout the yokes. We've gotten used to the taste and the "once new" is now the current "norm."

With the start back up of school, kids being sick, etc... I have not had a lot of time to try new recipes. We've been recycling the ones that we really enjoy. However, I am going to start searching for some good fall healthy foods and some healthier desserts. I noticed that the American Heart Association has a dessert book out and I am tempted to check it out at the library. I'll let you know if I do that.
